Romeritos is a traditional Christmas dish of the Mexican cuisine. It consists in cooking the leaves of romerito (not to confuse with rosemary), a quelite that grows in the milpa.
Romeritos are served in mole a traditional chocolate based sauce, and accompanied with shrimp powder pancakes.
The contrast between the romeritos bitterness, with the mole’s sweetness and with the shrimp’s saltiness, results in a very particular explosion of flavors.
